Pasta with almonds and datterini tomatoes
Ingredients (Serves 4):
- 320 g. pasta
- 400 g. Fiorfiore datterini tomatoes
- 80 g. peeled almonds
- 1 garlic clove
- 2 tbs capers
- 1 tbs di chives
- Salt
- Pepper
- EVOO
Preparing:
- In a pan, toast the chopped almonds together with 2 tablespoons of olive oil and a clove of garlic. Add the Fiorfiore datterini tomatoes and cook the sauce for 5 minutes. Remove the garlic, add the capers and the minced chives and season with salt and pepper. Stir and continue cooking for another 5 minutes.
- Cook the pasta in abundant salted water, drain and season with the sauce. Garnish with a sprinkle of chopped almonds.
